Not sure if this helps, but I just use Apple Notes + a shortcut.

Enable captions on YT, hit cmd+A to select all text, then cmd+C/V into Notes.

Sounds dumb but works for how to get note of youtube transcript on mac without extra tools.

Sometimes simple = best.
